Start using cast iron!

Ive recently been cooking with cast iron and I LOVE it.  Cast Iron has been around for hundreds of years.  One of the most prized possessions that the early frontiersman had was a cast iron skillet.  It was indestructible, easy to maintain, and did a great job cooking food.  Its the original non stick cooking pan!  When you season it properly and take care of it, its amazing how non stick it is.  From a health view point, be careful of  the traditional Teflon type of pan.  If you have a pan that was made before Jan 2012 throw it away!  The WHO claims the coating on these pans  contain PFOA ( perfluoroctanoic acid) and is possibly carcinogenic to humans.  PFOA is supposed to be phased out in the US but my rule is to not use any pan with a non stick coating on it.  I simply dont trust it.  You dont have to worry with cast Iron!  From a nutrition stand point studies do show you get some iron in your diet just by cooking with cast iron.  Next time you are at a flea market or yard sale, buy that used cast iron skillet, clean the rust off, read up on how to season it, and start using it!  You will use less oil, stay away from harmful chemicals, and get a little iron in your diet!
